Garlic Wine Recipe
A garlic wine recipe that makes 1 gallon.
Garlic is not what most people might attribute to a pleasant tasting wine, however, this will surprise you!
12 large garlic bulbs
4 cups of honey
1 Lemon, juice and rind
1 teaspoon Yeast Nutrient
¼ teaspoon Wine Tannin
1 crushed Campden Tablet
All-purpose White Wine Yeast
8 cups water
Peel the garlic, wrap in tin foil and bake at 180ºC for 2 hours until caramelised.
Bring 8 cups of large water to a simmer and add the garlic for 45 mins.
Strain out the pulp and return the liquid to the pot and add the honey. Simmer for a further 10-20 mins, skimming off any foam.
Pour mixture into the fermentation bucket. Add all other ingredients except the Yeast and leave for 24 hours.
After 24 hours check the Specific gravity, it should be between 1.080 and 1.090. If not leave for another day and check again.
Add the Yeast and stir daily for 4 days or until the frothing stops. Strain and siphon into the demi-john and attach airlock.
Rack in 6 weeks then every 3 months for a year and bottle
